How to change DNS server on VPS instance?

I have edited /etc/dhcp/dhclient.conf as per instructions elsewhere but it make no difference.
/etc/resolv.conf does not change.

I want to point to a different DNS server - how do I edit this on my VPS instance, running Ubuntu?
