I own a Web cloud MX Plan so, using round cube webmail, and I'd like to know if there is a way to create a rule to automatically delete old emails in the trash, or if I have to switch to Exchange to get this feature?

Roundcube there is no specific built-in functionality to create rules that automate the deletion of old emails directly from the user interface.
If you prefer an automatic solution but do not have access to the server, I would recommend configuring an email client such as Thunderbird, which offers options to delete emails older than a certain number of days.
