you can you what you want (except bad things like DoS/scanning etc.) since your are the only administrator of the server.
But you have to know how to manage server.

Find a competent guy in the gamer community, but don't count on OVH for that sake. It is not their job and they are no consultants.
I know ovh wouldn’t help me, i thought i would find a competent guy here because i don’t know where else to search
use a proxmox and buy ip adresse so you could have different client on your server and so multiple servers for each ip you buy
