I'm seriously wondering about the actual resources allocated in personal and professional hosting. We've certainly seen prices go up, but on the resource side it seems very, very limited.
I install a WordPress + the Avada builder, and during simple page loads I regularly get 500 errors; the sites have 20–30 pages with occasional WooCommerce.
I have this type of setup in other data centers with also entry‑level prices and I don't see these 500 errors, and reloading the pages restores them.
The logs don't indicate anything pointing to a script problem, so I wonder if the personal and professional plans are still sized to host modern sites.
Have you encountered this kind of issue?

I think your issue will be the number of PHP processes you’re using.
A theme like Avada and a plugin like WooCommerce are very demanding. Avada itself is a very heavy theme with an enormous amount of options, loading many scripts and constantly querying the database. WooCommerce also adds its own layer of complexity, especially on product and cart pages.
But as @Gaston noted, Development mode will give us more detailed information.

I’ve enabled development mode and, apart from the following random 500 error, I don’t see anything else; in fact, I don’t see what putting the site into development mode achieves beyond bypassing OVH’s cache.
I’m using a private SQL with 2 GB of memory and a personal hosting.
WordPress+Avada+WooCommerce+WPML
I think this type of hosting is no longer suitable for modern sites that have quite a few plugins.

Yes, I also used Development mode and, a priori, you shouldn’t see that Error 500, but the reason behind it. How did you enable it?
So, we’re talking about the same thing, right?
When I disable all modules, there is no longer a 500 error ... the historic personal hosting really can’t keep up with modern sites. I’ll test the professional plan, but I think OVH leaves only very few resources on the personal offer for static HTML sites from the early 2000s...
Rest assured, Perso hosting is fully capable of hosting sites that use even many plugins
Are all the plugins and the theme you are using up to date and compatible with the PHP version you are using?
When you encounter one of these 500 errors, what do the logs from your hosting say? (web + errors)

I copied the site to my dedicated server on Plesk and got 0 500 errors... personal hosting =m.....
In the logs we can see that the PHP processes are saturated and that at certain moments they lack the capacity to respond to requests.
Have you looked at the source of the traffic? You have IPv6 connections; I suppose it's your IP and the IP 66.249.77.97, which belong to Google bots. This indicates that both human traffic and search‑engine bots are contributing to the saturation.
As @Asterix mentioned, it would be advisable to review the installed plugins.
Some plugins make many requests to admin-ajax.php. Identify which ones generate the most requests; you can use the Network tab of your browser’s developer tools and disable them. Basically to see if we can pinpoint the source of that problem.

Was your domain properly redirected to the dedicated server on Plesk?
I’m very surprised that, with development mode, no error is displayed on the screen.
This error message originates from the Apache server, not from PHP.
This time you need to go to your client area > hosting > web error logs. It should be in there.
