I am looking for the SP-128 and I see the prices offers are for 1, 3, 6 or 12 months. But the monthly cost is essentially the same - where you'd expect (usually) a discount for a longer commitment.
Or does it mean when signing up for a 1-Month server, that this is really just for a month and the server will be shut down without renewal possibility ?

OVH doesn't give discount for longer term "pre-paids". The only place where I've seen "discount" for "commited" usage, is the PublicCloud instances where there is a significant price decrease for month-to-month than for the per hour usage.
No, the 1-Month server can be run ad infinito, just that you'll have to renew before the renewal date.
the auto-renewal also have the options to automatically deduct the monies for a 1/3/6/12 month period.
