Hello,
I just discovered that adding a “+” sign in an email address doesn’t interfere with message delivery and that the message returns with the original text.
It allows you to clearly identify the source of the message and also makes filtering on receipt easier.
Example: contact+blog@my-domain.tld, contact+president@my-domain.tld
All go to the inbox contact@my-domain.tld and you can see exactly where the address was taken from :).
It works on Gmail, Free, but not on the email addresses of our web hosting 
.
Would this be possible with OVH? Do we need to adjust a setting?

I think mail extensions (addresses with the plus sign) are not compatible with the solutions offered by OVHcloud. What they do provide are aliases, which are “mask” addresses that work differently.
The “plus sign” method is an advanced feature of email software that some providers implement. OVH’s servers, in their shared offerings (MX Plan, Zimbra), I believe do not have this function enabled.
I can suggest an alternative that does work:

Create an alias for your primary account (contact@mydomain.com).

Create specific aliases such as contact-blog@mydomain.com or contact-president@mydomain.com.

Set up filters in your webmail (Zimbra or Roundcube) so that emails sent to each alias are automatically sorted into different folders, achieving the same organizational function.

The answer by @sturpin is not correct.
At OVH,
- the “historical” MX mail hosting with Roundcube webmail does not have this feature.
- The Pro, Exchange and Zimbra hosting have this feature.

This would definitely be a useful addition. Plus addressing has made managing emails much easier for me on other providers.
