Sorry, I'm not a Baremetal specialist.
However, depending on the technical specifications and components of some servers, some OS may not be offered.
You can see on the commercial sheet that the SCALE-4 and SCALE-5 do not have access to ESXi :

I guess it's related to the Intel processor.
On SCALE-1, SCALE-2 and SCALE-3 they are AMD.
